Carrot Rice

Ingredients :

  1. Rice - 1 cup (250 gms)
  2. Water - 2 cups
  3. Carrots - 8 (grated)
  4. Oil - 3 tspn
  5. Ghee - 1 tspn
  6. Salt - 2 tspns (to taste)
  7. Onions - 2 (chopped)
  8. Green chillis - 4 (sliced)
  9. Cardamom (Elaichi) - 3 pieces
  10. Cloves (Lavang) - 3 pieces
  11. Cinammon (Dalchini) - 3 small pieces
  12. Biriyani leaves - 2
  13. Jaji puvvu Flower - 3 small pieces
  14. Cashewnuts - 5 pieces

Procedure :-

  • Cook rice and put aside.
  • Pour the oil and ghee in a pan and heat in low flame.
  • Add cardamom,cloves,cinammon,biriyani leaf,jaji puvvu,chillis and fry and add cashew,onions and fry well and add grated carrot and fry well and add salt.
  • Add cooked rice and mix well in low flame.
  • Then serve it with Raita or curd.
